CHILLI MUTTON 

I am back again with another interesting and hot favourite recipe from my kitchen which was passed down by my Mother-in-law. I try to make it like hers and I fail. Today’s one is another version of her famous Chilli Mutton with my twist.

In her recipe, she transforms the mutton dry fry curry into Chilli Mutton incorporating chillies, Garlic and onions and capsicum.  I did that many a times. Today I tried a different version of it. I made it fresh. So let’s start with the recipe.

INGREDIENTS :-

Mutton – 300gm

Onions – 3 medium sized diced

Garlic – 7 to 8 cloves chopped

Ginger – 1 and half inch thick chopped

Green Chillies – 5 chopped

Dark Soya Sauce – 2tbsp

White Vinegar – 1tbsp

Salt and Pepper for seasoning

Cornflour Slurry – 1 and half tsp Cornflour mixed with 2tbsp water

White Oil – 1 cup

PROCEDURE :-

✔Boil the mutton pieces in water with some salt and pepper. I gave 4 whistles on high and then 3 on low and turned it off. Keep some mutton pieces with Bone to get the juices. Once the pressure cooker releases the steam, strain the mutton. Keep the stalk. It’s really tasty and rich.

✔Now cut the boiled pieces into small ones and fry them in a pan with oil. It just would be shallow fry. No deep frying needed. You can if you want. In that case just dust them with some flour and then deep fry them in oil. Set it aside.

✔Dice the onions in cube. Chop the Garlic, Ginger and green chillies. In the same oil, add the ginger and garlic and brown them.

✔Now add the onions and fry. Add in salt and pepper and mix. When the onions are pretty much translucent, add the fried mutton pieces and green chillies. Stir fry them on high flame.

✔Now pour the vinegar and dark soya sauce. Toss them properly. Add the Cornflour slurry and some part of the mutton stalk and let it simmer for a minute.

✔Serve hot with whatever you wish to eat them with. We had homemade paranthas.

💬You can add capsicum. It wasn’t available then so couldn’t add it.

💬You can add or lessen the Green Chillies. It depends on your taste buds.

💬You can make more gravy consistency in it.

💬This serves minimum 3 to 4 people.

💬Be careful with the salt as the stalk had salt too.
