Anyway, moving on… today’s post is all about the eternal love for cheese and pizza and Italian Seasonings and more cheese. Well before also I have tried to make pizza at home, with the homemade pizza dough and not with the store bought one. And it turned out to be sort of okay. Of course I followed some recipe from the google but somehow the base crust was not absolutely correct. It wasn’t fluffy and crispy and soft and totally awesome. Moreover I used to make it on stove top as I didn’t have an OTG previously. I still don’t own an OTG. But recently we bought a Convection Microwave Oven and trying out authentic pizza was due for some time. So today I thought why not do some experiments. Today my guinea pig was my 8 year old son, who is my harsh critic after my husband. Harsh because Rik won’t even touch it, if it turns out bad.And today when I served him two big and thick cheesy slices of the pizza, he was gobsmacked and finished the plate without a word. That meant mission accomplished. 

I got this recipe from a blog after many searches. There were many, but I really like this particular one due to the size and proportions and measurements of the ingredients. The blog’s name is sallysbakingaddiction. I tweaked a little bit here and there but mostly I tried to follow the measurements to the T!!! So here it goes. 

For the Pizza dough :-

 All Purpose Flour – 500 grams

Dry Yeast – 7grams

Warm Water – 320 ml

Extra Virgin Olive Oil – 2tbsp

Salt – 3/4 tsp

Granulated Sugar – 2 tsp

Cornflour – 1 tsp

For the Pizza :-

Pizza Sauce – 2-3 tbsp

Mushroom – 4-5 pieces

Onions – 1 medium

Amul Cheese Cube – 5 pieces

Amul Cheese Slice – 2 slices

Amul Pizza Cheese – 1/2 cup grated

Salt and black pepper as per seasoning

Italian Seasoning as per taste

Chilli flakes as per taste


1. To Make the Pizza Dough :-

a.) First warm up the mentioned amount of water in Microwave Oven or on stove. The watee should not be hot. It needs to be just warm or lukewarm. Now in that warm water put the specified amount of yeast and stir a bit and let it rest for five minutes. This is called proofing of your yeast. After five minutes check if it’s mixed or not. If the water turns frothy that means your yeast has dissolved, if not then it means your yeast is dead. 
b.) Now sieve the flour through and add salt and sugar in it along with the olive oil. Now make a well inside the flour and pour in the yeast water gradually. You dont need to put everything in at the same time. Now start mixing the flour and water. Add more yeast water gradually and sum up a sticky dough. Knead properly. Add more flour if needed but not too much. Keep on kneading for 5 to 7 minutes. You can use your hand or a machine for kneading and mixing. After 7 minutes, poke your finger in the dough, if it slowly bounces back, then the dough is ready to rise. If not then keep on kneading.

c.) Now coat a bowl in olive oil and place the dough in it and coat it with that oil everywhere and then cover it and let it rest in a warm place for 1-2 hours minimum so that it can double up in size. If you keep it in a warm place, then the task of rising will speed up. I placed it inside a microwave oven. You can preheat an oven and then place it inside after turning the machine off. I didn’t preheat but my oven was warm so I kept it inside the oven for 1 hour as I was in a hurry for starting pretty late. In one hour it rose pretty well, almost doubled up the size. Now after an hour take it out and knead it again to release air. 

d.) Now cut it into two balls. Use the one you need. You can use both. It depends on the number of pizza you want to make and of what size – small, medium or large. I took one portion of it as I wanted to make one pizza only. I took that portion, make a round ball. And knead it again and let it rest for 15 more minutes  

e.) In the mean time, preheat your oven in 200 degree Centigrade. After 15 minutes, take a baking tray and grease it with olive oil and sprinkle some cornflour on top of it. Now roll the pizza dough ball and place it on top of the baking tray. 

f.) Here I made a twist. I filled the sides first with cheese ( amul cheese cubes cut into thick long rectangular shaped strips) and sealed them in. Then I smeared a tablespoon of pizza sauce on the base. Sprinkles some Italian seasoning. Then placed 2 chesse slice on top of it. After that, again smeared another tablespoon of the sauce on it and then covered it with sliced mushrooms and ringed onions. Sprinkle salt and pepper on it and then covered it with generous amounts of shredded cheese slice, grated amul cheese cubes and amul pizza cheese. Sprinkle a handful of Italian seasonings on top of it. Now brush the sides of the pizza with some olive oil.

g.) In the meantime, the oven must be ready with all the preheating thing. On a high rack, place the baking tray (here I have used my borosil glassware) with the pizza in it. Now put it inside the oven. Set the timer for 30 minutes and the temperature should be 200 degree Centigrade.  And click start. Check in between. If your pizza turns golden brown on top with a crispy sides then it should be ready. It usually takes 20-30 minutes at the max. So keep an eye on it so that it doesn’t burn. 
h.) After 30 minutes let it rest for five minutes and the serve hot with more Italian Seasonings and Chilli flakes. I didn’t use it in between as I made it for my son. Usually children avoid chilli flakes. For adults, add more if needed as per requirement. 

A Quick Pizza Sauce Recipe:

I learnt it on a site only from the net. 

Blanch 4 tomatoes (medium) . Get rid of the skin. You can keep it if you want to. Cool them up. Now in a blender put the tomatoes (diced), 6-8 cloves of garlic, 1/2 tsp salt, 1/2 black pepper, 2 tsp balsamic vinegar and olive oil. Blend it well into a puree. Now use it as much needed. You can refrigerate them in ice trays and use as per requirement or keep it in air tight jar in the freezer for later use. There are many versions of pizza sauce in the internet. I tried this one as I was in a hurry. It clicked well for me. You can try this or opt for other recipe or you can also use simple tomato sauce if you donot wish to do all the hard work.

As for toppings, my son prefer mushrooms loaded with cheese only. So I chose this. But a lot more can be added to be very honest and we all know that. Feel free to use just anything you wish to eat. It can be shredded chicken, sausages, salami, ham, bacon, beef chunks, olives, jalapeno peppers, bell peppers, corns, babycorns and the list goes on….. just cut them into biteable portions to fit into the pizza base. To make it more cheesy, put in cream cheese or cheese spread as per your wish. 
Pizza is a very free and a creative dish. Play it around with lots of ingredients. Just check the seasonings. You can make a dough with wheat flour too if you want a healthier version of it. The crust, be it thick or thin depends on how you want again.
